Forest Honey

950 g

Also knnown as The Essence of the Wild.

Deep, dark, and mysterious—our Forest Honey is a testament to the untamed beauty of our local woodlands. Unlike traditional honey made from flower nectar, Forest honey is crafted by bees gathering “honeydew” from the leaves of ancient trees in the Divčibare groves.
The result is a honey that is less sweet but far more complex than its meadow-grown cousins. A Robust Flavor Journey. For those who find floral honeys too sugary, Forest honey offers a sophisticated alternative.

The Palette: A striking dark amber to nearly black hue.
The Taste: Rich, malty, and slightly woody, with lingering notes of caramel and spice.
The Texture: Thick and velvety, with a slow-flowing consistency.

Culinary Inspiration
Its bold flavor profile allows it to stand up against strong ingredients. Try it:

  • Glazed over roasted meats or root vegetables.
  • Paired with strong, aged cheeses like Pecorino or sharp Cheddar.
  • Stirred into dark chocolate desserts to add a smoky depth.
  • Taken straight from the spoon to soothe a stubborn cough or sore throat.

Forest honey is often referred to by beekeepers as “healing honey.” Because it comes from trees rather than flowers, it contains a significantly higher concentration of antioxidants, minerals, and essential oils. It is particularly rich in iron and magnesium, making it a favorite for those looking to support their immune system or recover after physical activity.

Harvest Moon: Late Summer (July – August)
